1 large grapefruit
1 fennel bulb
2-3 tbs honey
1 tbs white wine or apple cider vinegar
3 tbs virgin olive oil
salt and pepper.
Peel the grapefruit, remove the pith and the skin holding the segments, chop or break the segments into small pieces with your fingers. You can be a bit rough, just catch the juice for the dressing.
CAREFULLY! I repeat, CAREFULLY shave the fennel with the mandoline slicer. Add to the salad bowl along with the grapefruit.
Dressing: Important! Fennel and Grapefruit can be bitter, so the importance here is to make a sweet focused dressing.
Heat 3 tablespoons of honey, to get it runny. Add the grapefruit juice, white wine vinegar, olive oil, salt and pepper. Mix the dressing well and toss through the salad.
