Muesli Bars

Healthy and Naughty - Perfect Balance. (:

Chocolate Coated Muesli Bars

500g of untoasted muesli, your choice of mix.
1 tbs cornflour
150g Butter
1/2 cup golden syrup
1/2 cup honey
500g milk chocolate

1 Preheat the oven to 180 degrees C. and line a cookie tray with baking paper, let the paper hang over the edges
In a large bowl mix the muesli and cornflour *See Notes*  Set aside.
In a small saucepan, melt the butter, honey and golden syrup over medium heat. Stir over heat until the mix has melted and is bubbling.
Pour in the hot syrup into the muesli and mix well. Spoon mixture into the prepared pan and spread evenly.
Bake for 30 minutes or until crisp and golden. Remove from oven and let it cool in the pan!
Melt the chocolate in a double saucepan (metal bowl siting on a saucepan of boiling water). Stir gently until chocolate has is smooth and runny. *See Notes*
7. Pour and spread the melted chocolate over the muesli bars, use a spoon to spread the chocolate to all the corners, then put it in the fridge to chill overnight
6. In the morning, lift the slice out of the baking tray and with a long sharp knife, use one movement to cut the slice into 3cm squares with a large sharp knife. Eat all the broken squares as you go. :D Save the crumbs for dessert! *See Notes*

The Muesli mix can be altered to suit your taste, add more nuts, or shredded coconut, you can add all spice, or cinnamon, as long as its dry it can be added.
If the dry mix feels moist, (crush some in your hands, it should not form a ball) add more cornflour
When melting chocolate, do not let the water touch the melting chocolate.
If the chocolate is still chunky, you can add a tablespoon of thick cream.  Using a whisk sometimes helps.
Lastly, don't throw away the crumbs! they are very tasty on yogurt/fruit, ice cream, or add it to your apple crumble topping.
