Nachos Recipe

Tell me i wasn't dreaming...

I swear I made nachos for people to eat, and i followed a recipe. But after looking through most of our cook books (I skipped pass the Chinese and Korean cookbooks) I can't find the recipe. Now I'm wondering if it was in one of my weird dreams!

I still cant believe i don't have a nachos recipe. Ill go and have another look...

Hooray i found it!

It was called Mexican Tomato Casserole

2 tbs oil
2 red onions chopped
2 cloves garlic crushed
6 ripe tomatoes peel seeded and chopped
1 green capsicum chopped
1 tbs red wine vinegar
2 tsp sugar
1/2 tsp chilli powder
375g can corn kernals, drained
125g plain corn chips
1 1/4cup grated chedder cheese
1 cup sour cream
1/2 cup chopped fresh chives

Instructions:
Preheat oven to 160*C
Heat oil and sweat onion and garlic
Add tomatoes, capsicum, vinegar sugar and chilli powder. cook for 6-7 mins until tomatoes have soften and most of the liquid has evaporated. add corn and stir over low heat.
arrange layers of corn chips, sauce and cheese,
Spread sour cream over the top. bake for 15mins and sprinkle with chives.

Other Notes
Add Mozzeralla, Beef Mince, Beans, Guatamole, Chopped avocado
