Pork, Sweet Potato, Cranberry(ish) Roast

I love it when a recipe works! Its funny, all those gourmet traveller, Vogue Food and Living have recipes that never work. But good old BHG or Family Circle (hey what happened to them?) have recipes that always deliver!

Pork, Sweet Potato, Cranberry Roast
  • 1 large sweet potato
  • 1 red onion
  • 1 tbs crasins
  • 1 tbs jellied cranberry sauce
  • Salt and pepper to taste
  • Olive oil cooking spray
  • 4 pork cutlets
  • 16 sage leaves
  1. Preheat the oven to 200*C Line the roasting pan with baking paper and spray.
  2. Put the pork cutlets on your chopping board, season with salt and pepper on each side and spray with oil. Set aside
  3. Peel and cut the sweet potato into 0.5cm thick slices and arrange in stacks of 4, Peel and cut the onion into thick rings and place one set of rings on top of each. Top each stack with a teaspoon of crasins and a dollop of cranberry sauce. Salt and pepper, spray with olive oil and bake for 20 mins
  4. Remove the dish from the oven, bung on the pork cutlets and return to the oven for 20 mins.
  5. Remove the dish after 20 mins. Put 3-4 sage leaves on each cutlet respray and return to the oven for 5-10 mins, until cutlets are cooked through. Serve Immediately

And even better... it still works with a bit of variation. I didn't have crasins (sultanas) or jellied cranberry sauce (fig jam) or sage leaves (nothing)
