Banana Cake

Now that Bananas are back around the $2.00/kg mark we can afford to let bananas over ripe... therefore its Banana Cake time!
Banana Cake

4 oz (120g) butter
0.5 cup sugar
1 tsp vanilla essence
2x eggs
3x very ripe bananas
1tsp Bi-carbonate of soda
1Tbls milk
1.5 cups SR flour

Cream butter, sugar and vanilla, gradually beat in eggs, and add the peeled and mashed bananas.
Add Bi-carbonate of soda to milk stir.
Sifted flour Add to the butter mixture folding in gradually alternating with milk mixture.
Bake in 2x greased 7” round cake tins.
Moderate oven (180*c or 150 fan forced) for 25-30 mins
Skewer test
Leave in tin to cool slightly then onto a cake rack to cool competely

Icing

4oz (120g) packaged cream cheese
1oz (30g) butter
1 tsp vanilla
2x cups icing sugar

Beat cream cheese and butter smooth, add vanilla and gradually add in sifted icing sugar till a spreading constancy.

Smother the cake and then eat!

Comments:
  • Cake was rather dry but i only had 2 bananas, (steph had one for breakfast)
  • I only have big cake tins, with the spread moisture may have been lost.
Action:
  • Need to get smaller cake tins and hide the bananas.
